So basically, the cutest things ever.
Hellow (oh boy I can’t even spell hello right) readers! I know I’ve horribly neglected this blog ever since school started. My classes this year seem to be way more time-consuming than last year, but I will try to make an effort to post!!! And that effort is starting with… PECAN PIE TRUFFLES!
Fun fact: I think I’ve only ever had one slice of pecan pie in my life.
I know, it’s kind of sad. It tasted really good, but something about the texture was too weird for me. But it still tasted really good! So today I threw some stuff in a food processor, and BLAMMO- now we can all enjoy nicely-textured pecan pie truffles together. (Cheers of happy children in the background)
So! Let’s get started!
No-Bake Pecan Pie Truffles
- 1 cup toasted pecans
- 1 cup raisins
- 1/4 tsp vanilla extract
- 1/8 tsp salt
- 1 Tbsp water
- About 1/2 cup chocolate chips
- Optional but highly recommended: 4-5 animal (or graham) crackers, crushed
Directions: In a food processor, process first four ingredients until slightly sticky. Add water and process again until a “dough” forms. Scoop out and roll into
905834793428890p2350389 balls. Place in refrigerator to chill. Meanwhile, melt your chocolate chips in the microwave until smooth. Carefully dip each truffle into chocolate to coat evenly. If you want, sprinkle the crushed crackers on top, while the chocolate is still melted. Freeze or refrigerate until set.
Yay! You’re done! Howe (how) easy was that??? Too easy, because now you can go make 1,000 and eat them all and regret everything in life. Just kidding, don’t do that. Please!
