Ice Cream Cone Cupcakes

Ice cream cone cupcakes.

With cream cheese frosting.

And sprinkles.

Don’t even try to deny it! You’ve secretly been waiting for this day to come!

Cream Cheese frosting

I’ve seen cupcakes baked in ice cream cones here and there… but it wasn’t until recently that I though to try it with my  that they became a reality. Shmear and some cream cheese frosting, top with sprinkles (a necessity) and BAM! Deliciousness in a cone! Not that these wouldn’t be delicious just baked in plain old cupcake liners, but letsbehonest… everything is better when it looks like ice cream.

And now I’m running out of things to say. Today is not a writer-brain-wave-genius kind of day for me. Plus… it’s hard to concentrate when you’re staring at a picture of a cupcake with frosting. And listening to really epic violin music. If ya want to sympathize with my pain, go listen to Taylor Davis (her music=love!!) and stare at this post. While simultaneously writing a story. It’s not easy!!!!!


Let’s get to the food, shall we?

(Before my ramblings start to get psychotic and violent…)

Ice Cream Cone Cupcakes


  • 1 cup white whole wheat flour (120 g)
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • Heaping 1/8 tsp salt
  • 1/3 cup raw (or not) sugar
  • 1/2 cup milk of choice
  • 1 Tbsp apple cider vinegar
  • 1 large egg white
  • 2 T avocado (or other neutral) oil
  • 1/4 tsp stevia extract
  • 1/2 tsp butter extract
  • 8 waffle cones (average sized ones)

Preheat oven to 350º.  Place your waffle cones in a muffin tin. In a large mixing bowl, add first 5 ingredients and stir well. Add in remaining ingredients and mix. Scoop the batter evenly into the waffle cones and bake for 20 minutes or until golden brown.





Cream Cheese Frosting

(I didn’t measure this out exactly… so just eyeball it and do lots of taste testing as you go!)

  • 12 oz silken tofu (I recommend Mori-Nu)
  • 6-ish oz cream cheese
  • 1/3 cup-ish powdered sugar
  • 1/2 tsp vanilla extract
  • stevia extract as needed

Place everything in a food processor and BLEND BLEND BLEND!!! Store in fridge. (This should last at least a week… possibly more?)
