But seriously, this mug cake was SO DARN HARD TO PHOTOGRAPH!! In the end I had to use some cute napkins and chocolate chips to make it look somewhat decent. But obviously there’s only so much cute props can do….

Anyways! Let’s talk about this mug cake. It is:

Sweet

Cinnamony

Doughy

Pumpkiny

Delicious

And that’s not all! You can totally customize this mug cake. If you add chocolate chips it’s chocolaty. If you spread on cream cheese it’s creamy and slightly tangy. And if you top it with whipped cream (hey, we don’t judge here) then it’s THE FABULOUSEST IT GETS!!! (WordPress is trying to tell me fabulousest isn’t a word, but what do they know? NOTHING.)

^ And here’s a mug cake without any chocolate chips on it. I don’t know why you would do that but hey, there are some weirdos out there! (I’M KIDDING! Pffft not…)

And you guys see that pumpkin there on the right? That is a HOME GROWN pumpkin!! Wow!!

Ok anyways, I bet you would like the recipe. No? You say you just came here to hear my beautiful virtual typed-up voice? I’m flattered! Well, I’ll give the recipe anyways cause I’m nice.

Pumpkin Cinnamon Mug Cake

Adapted from Microwave Cinnamon Roll

Ingredients:

  • 1/4 cup + 2 Tbsp white whole wheat flour
  • 1/2 tsp baking powder
  • 1/8 tsp baking soda
  • 1 tsp raw (or un-raw, doesn’t really matter TO MEEEEE)
  • 1 Tbsp unsweetened applesauce
  • 3 Tbsp pumpkin puree
  • 1/4 tsp vanilla extract
  • 1/4 tsp vinegar
  • Squirt stevia extract
  • 2 pitted dates
  • 3 Tbsp pumpkin puree
  • 1/4 tsp cinnamon
  • 1/4 tsp pumpkin pie spice

Directions: Grease a porcelain ramekin and set aside. Combine the first four ingredients in a small bowl and mix well. Add the next five ingredients and stir again to make a dough. Set aside. In a separate small bowl, mash the dates with the last remaining ingredients. Are you ready? THIS IS WHERE IT GETS TRICKY! Ok, so now take a scoop of your dough. and spread it on the bottom of the ramekin. Now, scoop on a bit of the filling and spread. Repeat this until all the dough and filling is used up! Microwave your mug cake for about 1 minute to 1 minute 20 seconds.
