That sounds good to my tastebuds… but not so much to my sense of rhythm.

Whatever. We’ll just stick with that.

Snickers Ice Cream Bars

For the ice cream:

  • 1 cup Greek yogurt
  • 1 cup 1% milk
  • 1/2 cup raw sugar
  • 1 Tbsp neutral oil (I used avocado)
  • 1/2 tsp vanilla extract
  • 1/4 tsp stevia extract
  • tiny pinch salt

Mix all ingredients together and churn as instructed. If you don’t have an ice cream maker (or yours wasn’t working) you can freeze these in 4-5 containers overnight and then blend in a high-speed blender.

 

For the caramel:

  • 1 1/4 cup pitted medjool dates (180 g)
  • 1/2 cup water (or more or less as needed)
  • 1/4 cup raw sugar
  • 1 T neutral oil (I used avocado)
  • 1/2 tsp vanilla extract
  • 1/2 tsp butter extract
  • pinch salt

In a food processor, puree all ingredients EXCEPT WATER as best as you can. Pour mixture into a hot saucepan and add water. Let cook, stirring occasionally, until a slightly chunky caramel has formed, about 4 minutes.

 

For the peanut butter filling:

  • 1/4 cup (64 g) natural peanut butter
  • 2-3- T milk
  • 1 Tbsp maple syrup, warmed up
  • pinch salt
  • “Optional:” chopped peanuts

Mix together all ingredients in a small bowl.

 

For the chocolate coating:

  • 1 1/2 cups (220 g) chocolate
  • 1/4 cup neutral oil

Microwave chocolate chips for 30 seconds. Stir in oil. Microwave using 10 second intervals until completely melted.

Directions: Line a 9 x 9 in. pan (or similar dimensions) with parchment paper with tabs (like this). Scoop ice cream on top and freeze ~20 minutes. Layer on caramel and peanut butter filling, along with peanuts. Let freeze another ~20 minutes. Dip each bar into melted chocolate and quickly return to freezer. Makes about 12 bars, depending on how big you cut them.
