Breakfast gets fancy.
Or, if fancy’s not your thing, breakfast gets deluxe. Breakfast gets extravagant. Breakfast gets sumptuous. Breakfast gets ornate.
If none of those sound good, you can opt for some of my favorite options:
- Breakfast gets chichi
- Breakfast gets froufrou
- Breakfast gets rococo
And if you don’t like the sound of any of those, I’ll just conclude that you don’t like your breakfast to be deliciously complex with its layers of hearty yet fluffy pancakes studded with rich chocolate chips and topped with a sticky-sweet sautéed banana compote. (That was a mouthful! No pun intended.)
But reeeeeeally, who doesn’t like the idea of a froufrou breakfast? You’d have to be crazy or something.
(Or insane, nuts, kooky, barmy, daft, delirious, or fruity.)
Banana Chocolate Chip Pancakes
Makes one serving of pancakes and two servings of banana
For the pancakes:
- 1/3 cup white whole wheat flour
- 1/2 tbsp erythritol
- 1/2 tbsp chia or flax meal
- 1/4 tsp baking powder
- 1/8 tsp baking soda
- 1/16 tsp salt
- 1/3 cup almond milk
- 1 tbsp unsweetened applesauce
- 1/2 tsp apple cider vinegar
- CHOCOLATE CHIPS GALOR!!
For the banana compote:
- 1 medium banana, ripe
- 1 tbsp avocado oil
- 1 tbsp erythritol
- 1/4 tsp vanilla extract
Directions: In a small bowl, combine all dry pancake ingredients. Add all wet pancake ingredients and stir until combined. Heat a skillet on medium heat and grease with butter or oil. Dollop on the batter to make four pancakes. Cook each side for 1-2 minutes or until golden brown. Makes four pancakes. For the banana compote: Slice the banana in a small bowl and combine with remaining ingredients. Heat a skillet to medium-high heat and sautée the mixture for about 3 minutes, or as long as desired. (No extra oil for sautéing should be needed) Makes 2 servings of banana compote.
You can totally top these pancakes with my healthy banana chocolate ice cream! Or regular ice cream, if you want to be boring. Or yogurt, if you want to be even boringer. Whatever. I won’t judge 😛
