Back from where?
Well, from a 5-day church retreat that’s six hours away from where I live of course! Yep, a retreat right after a vacation. This month is kinda crazy.
NOT that any of the craziness really matter though, cause the world tends to melt away when you’re eating a single serving microwave cinnamon roll. The pain of the tiredness, mosquito bites, and terrible and torturous bus rides is gone. Hallelujah!
However, if you need some pain (as an excuse to make this very therapeutic cinnamon roll) you can try saying the title ten times fast. Yeah, it might be easy at first, but I assure you it will start to sound like singusurgumsicrcinarol.
Even though cinnamon bun isn’t a typical trans-fat filled 850-calorie Cinnabon, it tastes JUST AS DELICIOUS. Seriously I don’t know how it tastes so good. Maybe I’m cinnamon-roll deprived or something, but this is SERIOUSLY GOOD. Note how I keep using all-caps to emphasize the amazingness of this cinnamon roll. You want this in your life.
Even the robot with sunglasses wants to eat it.
Single Serving Microwave Cinnamon Roll
- 1/4 cup white whole wheat flour (please report back if you use a gluten-free flour!)
- 1/2 tsp baking powder
- 1/8 tsp baking soda
- 1 tsp erythritol (or other granulated sweetener)
- 1/2 tsp ground chia or flax seed
- 1 tsp coconut flour
- 2 Tbsp unsweetened applesauce
- 1 Tbsp + 1 tsp milk
- 1/4 tsp vanilla extract
- 1/4 tsp butter extract (you can omit)
- 1/4 tsp rice (or other) vinegar
- 1/8 tsp stevia extract
- 1 Tbsp unsweetened applesauce
- 1/2 tsp cinnamon
- 1/2 tsp coconut flour
- 1 Tbsp powdered erythritol
- 1/2 tsp milk
Grease a porcelain ramekin (or maybe a mug would work) and set aside. Combine all the dry ingredients in a medium bowl. Add wet. Mix thoroughly to form a slightly sticky dough. Dust a flat surface with more wheat flour and plop the dough onto the surface. Now, combine all the filling ingredients in a small bowl. Spread the dough out into a long, thin-ish rectangle. Spread all the filling on top of the rectangle. Roll the dough up and place into the ramekin. Microwave ~1 minute. Mix together glaze ingredients and top cinnamon roll with glaze just before serving.
That’s a pretty good nutrition label, if I do say so myself! I didn’t compare it to anything since I wasn’t sure which size Cinnabon it was closest to… all I know is that for a pretttty big serving, those are some good-lookin macros!
