So… I may or may not have an obsession with protein bars.
But that’s completely okay, since these protein bars are so good for you!
Of course, the fact that
I am addicted my hand is addicted to these may contribute to the obsession just a little. That and the fact that these are delicious. But let’s be real here, who doesn’t have at least one food that they can’t stop eating?
Other foods on my obsession list:
- Popcorn (especially Skinny Pop)
- Chocolate chips
- Frozen blueberries
- Peanut butter
Popcorn and raisins, popcorn and raisins, popcorn and raisins…
That just might become my new war chant (Who needs Narnia?).
Cookie Dough Protein Bars
- 3/4 cup (62 g) vanilla brown rice protein powder
- 1/4 cup (20 g) flour (I used white whole wheat)
- 1/4 cup (45 g) raw sugar (or other granulated sweetener)
- 1/2 cup oats
- 2.5 Tbsp (20 g) coconut flour
- 3 Tbsp almond butter
- 2 Tbsp unsweetened applesauce
- 1/2 tsp vanilla extract
- 1/2 tsp butter extract (you can omit if necessary)
- 1/4 tsp stevia extract
- 1/2 Cup + 1T milk of choice (as needed)
- 1/4 cup chocolate chips
In a large bowl, combine the first 5 ingredients and stir. Add the remaining ingredients but only 1/2 cup of the milk. Stir well. Add the additional milk if needed. Press the dough into a plastic or glass container (About 50 square inches) and refrigerate about 4 hours, or as long as you can wait. Makes ~10 bars.
See how easy that was? No baking, no dehydrating, nothing but mixing refrigerating. Wait a little (optional) and voila! You have some pretty darn amazing protein bars.
These are almost like fudge cookie dough protein bars, that’s how soft and chewy these are! They are so delicious….
