I don’t know what to say.
All I know is that these protein bars are WAY healthier than the store-bought kind. No fractionated palm kernel oils, hydrolyzed collagen, D-Alpha Tocopheryl Acetate, or pyridoxine hydrochloride present here!
Not that I really know what any of those are…
Regardless of the ingredient list, these protein bars taste SO good! Seriously, I didn’t even know what to say. The days of mediocre home-made protein bars are in the past!

PB Protein Bars for Two
- 20 g brown rice protein powder (I used Jarrow’s Formula)
- 2 Tbsp peanut flour
- 1 Tbsp oat flour
- 1 tsp raw sugar (or other granulated sweetener)
- 1-2 Tbsp crushed bran flakes (this is for texture)
- 1 Tbsp coconut flour
- 1/16 tsp salt
- 5 Tbsp almond milk
- 1 tsp natural peanut butter
- 1/8 tsp stevia extract, or to taste
- 1/4 tsp vanilla extract
- 10-15 chocolate chips, or other toppings
Mix together first seven ingredients in a small bowl. Add remaining ingredients and stir to form a batter. If needed, add more almond milk. Scoop batter into a small container and freeze ~30 minutes, or until firm. (You can also choose to eat the batter as it is, un-firm.) Before serving, press optional toppings on top.

While the nutrition facts might not look very different, mine is the better choice. Not only are my bars made with only natural, pure ingredients (unlike most pre-packaged brands!), they taste better! They are also vegan and gluten free.
